  • 1 cup 2% milk
  • 3 eggs, beaten
  • 1/2 cup freshly grated Romano cheese
  • garlic powder to taste
  • onion powder to taste
  • salt and pepper to taste
  • 1 pinch dried parsley
  • 1/4 cup vegetable shortening

Combine all the ingredients - flour, zucchini, onion, milk, eggs that have been beaten into a smooth consistency, and the grated Romano cheese - in a large mixing container. Add some flavor with garlic powder, onion powder, salt, pepper, and chopped parsley to give the dish a nice aroma. Mix everything together until it forms a smooth batter.

Next, heat about 1 tablespoon of shortening in a large frying pan over medium heat. Divide the batter into smaller portions and cook them in batches, dropping spoonfuls of the mixture into the hot pan. Use a spatula to flatten them slightly and cook until they're cooked through, with the centers looking dry. Flip them over and continue cooking until the other side is golden brown. Remove them from the pan and place on a plate to keep warm. If needed, add more shortening to the pan to prevent sticking.
