Ingredients
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3 leaves fresh basil, minced
  • 2 tablespoons finely grated Parmesan cheese
  • 2 tablespoons cold water
  • 2 eggs, beaten
  • 3 cups oil for frying
  • 12 pumpkin or zucchini blossoms

Combine the flour, baking powder, basil, and Parmesan cheese in a medium-sized bowl; blend them together until well combined.

Next, add the water and eggs to the mixture, stirring until it forms a smooth consistency.

Heat about half an inch of oil in a large and heavy cooking vessel over medium-high heat.

Once the oil has reached its optimal temperature, dip the blossoms in the batter to coat them evenly, and then carefully place a few of them at a time into the hot oil.

Fry each blossom on both sides until it's crispy and golden brown, then remove them from the oil using paper towels.
