Crispy Vietnamese Shrimp Balls
Ingredients
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 large egg, lightly beaten
  • 2 tablespoons minced shallot
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • 2 teaspoons packed light brown sugar
  • 2 teaspoons fish sauce
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
  • 1 1/2 cups fine bread crumbs
  • 2 large eggs, beaten
  • 1/2 cup vegetable oil for frying, or as needed

Begin by thoroughly washing the shrimp under cold running water, then gently pat them dry with a paper towel to remove excess moisture. Next, chop the shrimp into roughly chopped pieces and place them in a food processor bowl.

Add 1 egg that has been beaten until it's smooth, along with a minced shallot, 1 tablespoon of sesame oil, 2 tablespoons of cornstarch, 1 tablespoon of brown sugar, 1 teaspoon of fish sauce, 2 cloves of minced garlic, salt, and pepper to the shrimp in the food processor. Process until a uniform paste forms.

Transfer this shrimp paste to a separate bowl and refrigerate it for about 30 minutes, allowing it to firm up slightly.

Remove the paste from the refrigerator and use your hands or a spoon to shape it into small, round balls.

Prepare a steamer by inserting an insert into a saucepan and filling it with water, leaving about 1 inch of space at the bottom. Bring the water to a boil and add the shrimp balls, covering them with a lid.

Steam the shrimp balls until they become opaque and firm to the touch, about 5 minutes. Transfer them to a plate and let them cool to room temperature.

In a separate bowl, mix together some bread crumbs that have been seasoned with salt and pepper. In another bowl, beat 2 eggs until they're smooth.

Roll the steamed shrimp balls in the bread crumbs, then dip them in the beaten eggs, and finally roll them again in the bread crumbs. Place the coated shrimp balls on a plate.

Heat some oil in a small pan over medium heat. Cook the coated shrimp balls until they're golden brown on all sides, about 5 minutes.
