- 1/2 head cauliflower florets
- 2 medium onions, sliced into rings

Combine the chickpea flour in a medium-sized bowl and incorporate the minced garlic, salt, ground coriander, turmeric powder, chili powder, and garam masala. Create a central depression in the mixture; then gradually add water to this depression, continuously mixing until you achieve a thick, even batter.

In a large, heavy saucepan, heat oil over medium-high heat to 375 degrees F (190 degrees C). During this time, prepare the battered vegetables by dipping cauliflower florets and onion rings into the batter to coat them evenly.

Fry the battered vegetables in batches, working your way through each batch until they turn golden brown, approximately 4 to 5 minutes. Remove the fried vegetables from the oil and drain them on paper towels before serving
