Crispy Turkey Wontons with Cranberry Salsa
Ingredients
  • 3/4 cup lemon juice
  • 1 cup dried cranberries
  • 1 1/2 cups shredded cooked turkey
  • 1 cup prepared stuffing
  • 4 ounces cream cheese, softened
  • 1/4 cup thick turkey gravy
  • 1 (14 ounce) package wonton wrappers
  • salt to taste
  • 3 cups canola oil for frying
  • 2 tablespoons minced onion
  • 1 tablespoon lime juice
  • 1 teaspoon seeded and minced jalapeno pepper - or to taste
  • 1 teaspoon minced garlic
  • 1 teaspoon water
Instructions
1
Firstly, pour a generous amount of lemon juice over the dried cranberries in a bowl and let it sit for a moment.
2
Next, combine the turkey, stuffing, cream cheese, and turkey gravy in another bowl and thoroughly mix everything together until it's perfectly blended.
3
Take a wonton wrapper and place it flat on a clean surface; then, carefully spoon about 1 tablespoon of the filling into the center of the wrapper.
4
Moisten two opposite edges of the wrapper with a small amount of water, fold it in half lengthwise, and press the edges together firmly with a fork.
5
Sprinkle a pinch of salt over the wrapper, and then repeat this process with the remaining filling and wrappers.
6
Heat a substantial amount of canola oil in a large, deep skillet over medium heat; then, carefully add the filled wontons to the pan in batches and fry until they're crisp and golden brown, about 2 minutes per side.
7
Remove the fried wontons from the pan and place them on paper towels to drain excess oil; let them cool for about 5 minutes to allow the filling to set.
8
Discard any remaining lemon juice from the dried cranberries and transfer them to a food processor.
9
Process the cranberries several times until they're finely chopped, then transfer them to a bowl and mix in some onion, lime juice, jalapeno pepper, garlic, and water.
10
Serve the hot fried wontons alongside the cranberry mixture.
