  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 dill pickle, chopped
  • 2 tablespoons minced red onion
  • 4 slices rustic whole-grain bread
  • 4 slices Irish Cheddar cheese
  • 2 tablespoons whipped cream cheese, divided
  • 1 cup coarsely crushed potato chips (such as UtzĀ®)
  • 2 tablespoons mayonnaise, divided

Combine the canned tuna, mayonnaise, and Dijon mustard in a small bowl. Blend these ingredients until they're well combined. Add the finely chopped pickle and red onion to the mixture, stirring until it's fully incorporated.

Place two slices of bread on a flat surface and spread the tuna mixture evenly onto each slice. Top each slice with two slices of Cheddar cheese, pressing them gently to adhere.

Spread a thin layer of cream cheese on the remaining two slices of bread. Place these slices on top of the Cheddar cheese, creating a sandwich.
