Crispy Tonkatsu Rice Bowl
Ingredients
  • 2/3 cup prepared dashi stock
  • 2 teaspoons white sugar
  • 2 teaspoons mirin (Japanese sweet wine)
  • 2 teaspoons soy sauce
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 (3 ounce) fried breaded pork chops, sliced into long strips
  • 2 eggs, beaten
  • 1 1/2 cups cooked short-grain rice
Instructions
1
Combine dashi, sugar, mirin, soy sauce, and salt in a small bowl to create the base of our dish.
2
Heat vegetable oil in a small skillet over medium heat, allowing it to warm up before adding the next ingredients.
3
Carefully add sliced onions to the skillet and stir occasionally until they become translucent, which should take around 5 minutes.
4
Introduce the dashi mixture into the skillet and stir it in thoroughly to combine with the onions.
5
Lay pork slices delicately on top of the cooked onions, making sure not to overlap them.
6
Pour eggs around the pork slices in a circular motion, taking care not to break the yolks.
7
Cover the skillet and cook for an additional 2 minutes, allowing the eggs to set properly.
8
Divide cooked rice between two bowls and portion it equally.
9
Top each bowl with half of the onions, eggs, and pork slices, creating a visually appealing dish.
