Ingredients
- 1 (10.5 ounce) package firm silken tofu
- 2 cups water
- 2 tablespoons light soy sauce
- 2 tablespoons mirin
- 1 teaspoon dashi granules
- 1/4 cup all-purpose flour, or as needed
- vegetable oil for frying
- 2 green onions, chopped
Instructions
1
Gently position the block of tofu between two layers of paper towels to absorb excess moisture.
2
Place a plate on top and add a substantial weight, weighing between 3 to 5 pounds; compress the tofu for 15 minutes.
3
Drain and discard the liquid that accumulates during this process.
4
Concurrently, combine water, soy sauce, mirin, and dashi in a saucepan.
5
Bring the mixture to a boil over medium heat; then, remove it from the heat and set it aside.
6
Release the weight, plate, and paper towels.
7
Cut the tofu into 3/4-inch cubes to facilitate even cooking.
8
Dip the tofu cubes in a bowl of flour, ensuring they are lightly coated.
9
Heat oil in a heavy cooking vessel and fry the tofu cubes until golden-brown, taking 4 to 6 minutes.
10
If necessary, cook in batches to prevent overcrowding the pot.
11
Transfer the fried tofu cubes to a serving dish and pour the prepared sauce over them.
12
Sprinkle green onions on top for added flavor and visual appeal.
