  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 pinch salt
  • 1 cup water
  • 1 large egg yolk
  • 2 large egg whites, lightly beaten
  • 1 pound medium shrimp, peeled and deveined, tails left on

Collect and prepare all necessary ingredients.

Preheat a deep-fryer to the required temperature of 375 degrees Fahrenheit (190 degrees Celsius).

Combine flour, cornstarch, and salt in a large mixing vessel; create a depression in the center of the mixture.

Gradually add water and egg yolk to the depression, mixing only until the ingredients come together in a rough consistency; the batter will have a lumpy appearance. Incorporate egg whites into the mixture.

Dip each shrimp individually into the batter, coating it evenly; exclude the tails from the battering process.

Once a few shrimp have been coated, carefully place them into the deep fryer and cook until they turn golden brown, approximately 1 1/2 minutes.

Remove the cooked shrimp with a slotted spoon and place them on a paper towel-lined plate to drain excess moisture. Continue this process with the remaining shrimp, coating them in batches while the previous batch is being cooked.
