- 1 large sweet potato, peeled and grated
- 1/2 onion, grated
- 2 eggs
- 1/4 teaspoon black pepper
- 2 teaspoons olive oil, or more if needed
- 1/2 teaspoon salt
- 1 cup applesauce
- 1 cup plain nonfat yogurt

First, preheat your oven to 200 degrees F (95 degrees C). Next, prepare a baking sheet by lining it with paper towels.

In a separate bowl, create a mixture of water and salt by filling it with lightly-salted water. Then, rinse the grated sweet potato in this mixture and drain the excess liquid into a sieve. After that, use a cloth or paper towels to gently pat dry the grated sweet potato and place it into another bowl.

Now, squeeze out any remaining moisture from the grated onion using a clean cloth or paper towels and add it to the bowl with sweet potato.

In a separate container, whisk together eggs and pepper until well combined with the other ingredients.

Heat some olive oil in a non-stick skillet over medium heat. Once hot, use a spoon to scoop about 1 heaping tablespoon of the potato mixture per patty into the skillet.

Using a fork, flatten these patties and fry them until golden brown and crispy on the bottom, taking around 5 to 8 minutes. Flip these patties over and cook until they're golden brown on the other side, sprinkle with salt, then set them aside on the prepared baking sheet in the preheated oven.

Before cooking each batch of patties, mix the potato mixture thoroughly to ensure everything is well combined.
