Ingredients
  • 1 3/4 cups water, divided
  • 1 (8 ounce) can pineapple chunks, drained (juice reserved)
  • 3/4 cup white sugar
  • 1/2 cup distilled white vinegar
  • 2 drops orange food color
  • 1/4 cup cornstarch
  • 2 1/4 cups self-rising flour
  • 2 tablespoons vegetable oil
  • 2 tablespoons cornstarch
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1 1/2 cups water
  • 8 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 quart vegetable oil for frying
  • 2 green bell pepper, cut into 1 inch pieces

Combine 1.5 cups of liquid from a can of pineapple, reserved juice, granulated sugar, white vinegar, and yellow food coloring in a medium-sized cooking vessel. Heat it up over medium heat; set it aside momentarily.

Mix 1/4 cup of cornstarch powder with a small amount of water until the mixture is smooth and free of lumps; pour this mixture into the sauce, stirring constantly, until it thickens slightly.

In a separate bowl, whisk together 2 tablespoons of all-purpose flour, 2 tablespoons of oil, 2 tablespoons of cornstarch powder, an egg, salt, and white pepper until you have a thick, batter-like consistency. Gradually add 1.5 cups of water to this mixture.

Add chicken pieces to the batter; stir until they are evenly coated.

Heat a large, deep skillet or wok over high heat to 360 degrees F (180 degrees C). Fry the chicken pieces in the hot oil until they are golden brown, taking around 10 minutes; remove and drain on paper towels.

Arrange green peppers, pineapple chunks, and cooked chicken pieces in a layer on a serving platter; pour the hot sweet and sour sauce over the top.
