SERVINGS

Ingredients
- 5 yellow squash, grated
- 3 tablespoons grated onion
- 3 tablespoons all-purpose flour
- 1 egg, beaten
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons butter, or more as needed
- 1/4 cup shredded Cheddar cheese, or to taste
- 1/4 cup chopped onion, or to taste
- 1/4 cup sour cream, or to taste
Instructions
1
Drain the moisture from the grated squash by placing it in a colander and pressing out as much liquid as possible; you should now have approximately 1 cup of dry squash.
2
Transfer the dried squash to a bowl, then combine it with the onion, flour, egg, baking powder, and salt. Mix everything together until you have a smooth batter.
3
Melt the butter in a large skillet over medium-high heat. Using your hands or a spoon, drop small portions of the batter into the hot pan and shape them into round fritters with a diameter of 3 to 4 inches and a thickness of 1/4- to 1/8-inch.
4
Cook the fritters until their edges are a deep golden brown, which should take around 1 minute. Flip them over and cook for an additional 30 seconds to achieve the perfect golden color on both sides. Transfer the cooked fritters to a plate lined with paper towels and sprinkle them lightly with salt.
5
Repeat the process using the remaining batter, adding more butter to the pan as needed to maintain a smooth flow of melted butter.
6
Serve the warm fritters topped with Cheddar cheese, additional onion slices, and a dollop of sour cream.
