- 1/4 cup chopped onion
- 1 egg
- 1 tablespoon Dijon mustard
- 1 tablespoon dry breadcrumbs, or as needed
- 1 1/2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- 1/4 teaspoon cayenne pepper
- salt and ground black pepper to taste
- 1 tablespoon olive oil

Submerge a small pot in boiling water and immerse the potato within it. Cover the pot with salted water to facilitate cooking. Increase the heat to its highest level and bring the mixture to a rolling boil, then gradually decrease the intensity of the heat to its lowest setting, cover it, and let it simmer until the potato is tender, approximately 20 minutes. Remove from heat and allow the water to evaporate for a short period of time, about 1-2 minutes. Transfer the cooked potato to a large container and use a masher or fork to crush it into a smooth consistency.

Combine the cooked potato with tuna, finely chopped onion, beaten egg, mustard, bread crumbs, garlic powder, Italian seasoning, cayenne pepper, salt, and pepper in a bowl. Mix all the ingredients together until they form a cohesive blend.

Divide the tuna mixture into eight equal parts and shape each portion into a patty.

Heat a generous amount of olive oil in a skillet over its medium heat setting. Add the tuna patties to the skillet and cook them until they are browned on both sides and crispy, approximately 3 minutes per side.
