- 1 cup mayonnaise
- 1 tablespoon sriracha sauce
- 1 tablespoon ketchup
- 1 quart vegetable oil for frying
- 2 (12 ounce) cans fully cooked luncheon meat (such as SPAMĀ®), sliced into fries

Combine minced garlic, ground paprika, and a pinch of salt in a food processor and blend until they form a smooth paste. Then, add mayonnaise, sriracha sauce, and ketchup to the processor and blend until all the ingredients are fully incorporated.

Transfer the resulting sauce mixture to a bowl, cover it with plastic wrap, and chill it in the refrigerator until it has reached a chilled state.

Heat a substantial amount of oil in a deep-fryer or a large saucepan to 350 degrees F (175 degrees C). Rinse the luncheon meat 'fries' with cool water and gently pat them dry.

Cook the 'fries' in batches, starting with one batch at a time, until they are golden brown and crispy on the outside while remaining tender on the inside, taking around 4 to 6 minutes.

Remove the cooked 'fries' from the oil and place them on a paper towel-lined plate. Transfer the cooked 'fries' to another serving plate and serve them immediately with the chilled dipping sauce.
