  • ground black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 (3 pound) whole chicken, cut into pieces
  • 1 quart vegetable oil for frying

Combine flour, paprika, salt, pepper, garlic powder, onion powder, and cayenne pepper in a large resealable plastic bag. Add chicken pieces to the bag and mix thoroughly to coat.

Position floured chicken pieces on a wire rack set over a baking sheet, reserving the remaining flour in the bag. Refrigerate the chicken for 45 minutes or until the flour mixture has a pale appearance.

Simultaneously, add approximately 1 ½ inches of oil to a deep fryer or a 5-quart heavy pot. Heat the oil to 375 degrees F (190 degrees C).

Return the chicken pieces back into the bag of flour and mix once more to coat. This step ensures a uniform coating on the chicken pieces, resulting in crisper textures.

Preheat the oven to 200 degrees F (93 degrees C).

Carefully lower chicken pieces, 2 to 3 at a time, into the hot oil. Fry until golden brown, turning once, for approximately 8 to 12 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Transfer the fried chicken to a paper towel-lined plate to drain excess oil. Keep the fried chicken warm in the preheated oven while frying the remaining chicken pieces.
