Crispy Shrimp Toasts

  • 1/4 cup diced water chestnuts
  • 1/4 cup chopped cilantro leaves
  • 1/2 cup finely sliced green onions, plus more for garnish if desired
  • 3 garlic cloves, crushed
  • 1 tablespoon finely grated ginger root
  • 1 anchovy filet
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon Asian fish sauce
  • 1 tablespoon soy sauce, or more to taste
  • 1 egg white
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon paprika
  • 1 pinch cayenne pepper
  • 1 pinch salt
  • 4 thick slices white bread
  • 1 teaspoon Sesame seeds
  • 1 cup vegetable oil for frying, or as needed

Combine shrimp, water chestnuts, cilantro leaves, green onions, garlic, grated ginger, anchovy filet, sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne pepper, and salt in the bowl of a food processor. Pulse repeatedly to achieve a uniform blend; make sure to scrape down the sides of the bowl after each pulse. Continue processing until the mixture is well combined and reaches a smooth, paste-like consistency, approximately 1-2 minutes. Transfer the mixture to another bowl; cover it with plastic wrap and refrigerate for about an hour, allowing the flavors to meld together.

Gently warm slices of bread in a pan over low heat. Remove the crusts from the toasted bread and spread an equal amount of shrimp paste onto each slice, covering it evenly. Cut the slices in half and then cut them diagonally into diamond shapes. Sprinkle a light layer of sesame seeds over the shrimp paste.

Heat a large skillet over medium-high heat; pour in about half an inch of vegetable oil. When the oil is hot, carefully place the bread slices, paste-side down, into the skillet and fry until crispy, flipping them over every 2-3 minutes. Transfer the fried bread to a paper towel-lined plate and serve it immediately, garnished with additional sliced green onions if desired.
