Crispy Shrimp Tempura
Ingredients
  • 1/2 cup rice wine
  • 1/4 teaspoon salt
  • 1/2 pound fresh shrimp, peeled and deveined
  • 2 quarts oil for deep frying
  • 1/4 cup all-purpose flour
  • 1/3 cup ice water
  • 1/4 cup cornstarch
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 teaspoon white sugar
  • 1 teaspoon shortening
  • 1/2 teaspoon baking powder

Combine rice wine and salt in a medium-sized bowl, stirring until the salt is fully incorporated. Add shrimp to the mixture and cover the bowl with a lid, allowing it to marinate in the refrigerator for at least 20 minutes.

Heat oil in a deep-frying device or large cooking vessel to 375 degrees Fahrenheit (190 degrees Celsius).

In a separate medium-sized bowl, whisk together all-purpose flour, ice water, cornstarch, egg yolk, salt, white sugar, shortening and baking powder until smooth.

One at a time, coat each shrimp in the flour mixture by gently dipping it into the mixture. Carefully place a few coated shrimp at a time in the hot oil, being mindful of the temperature. Deep fry until golden brown on all sides, approximately 1 1/2 minutes. Use a slotted spoon to remove the fried shrimp from the oil and drain on paper towels. Serve warm.
