- 1/2 pound ground pork
- 3/4 pound cooked shrimp, shelled, deveined and coarsely chopped
- 2 tablespoons minced green onions
- 1 tablespoon minced fresh ginger root
- 2 tablespoons chopped water chestnuts
- 1 teaspoon cornstarch
- 1/4 teaspoon garlic salt
- 1 pinch white sugar
- 1 tablespoon dry sherry
- 1 teaspoon chili oil
- 1 tablespoon soy sauce
- 1/4 teaspoon sesame oil
- 1 (16 ounce) package wonton skins
- 1 pinch garlic salt
- 1 egg white

Heat a large skillet over medium heat and cook the ground pork until it is no longer pink, breaking it apart with a spoon as it cooks.

In a large bowl, combine the shrimp, ground pork, chopped green onions, grated ginger, and water chestnuts. Mix well with a spoon to combine.

Add the cornstarch, garlic salt, and sugar to the bowl and mix until they are fully incorporated into the mixture.

Next, add the dry sherry, chili oil, soy sauce, and sesame oil to the bowl and mix until everything is well combined.

Spoon about one teaspoon of the mixture onto the center of each wonton wrapper, leaving a small border around the edges.

Bring the points of the wrapper together to form a triangle and pinch the edges shut, sealing them with a small amount of egg white.

Meanwhile, bring a large pot of water to the boil and carefully add the wontons one by one, making sure not to overcrowd the pot.

If necessary, work in batches and cook the wontons until they float to the surface. Then, add a cup of cold water and bring the mixture to a boil again before removing it from the boiling water.
