Crispy Salt Pepper Chicken

  • 2 spring onions, finely chopped
  • 5 slices fresh ginger
  • 1 teaspoon Shaoxing wine (Chinese rice wine)
  • 1 teaspoon soy sauce
  • 1 clove garlic, crushed
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1 1/2 pounds skinless, boneless chicken breasts, cut into small pieces
  • 1 cup sweet potato starch
  • 3 tablespoons sweet potato starch
  • 1 quart vegetable oil for frying
  • 2 cups lettuce leaves
  • 1 tablespoon salt
  • 1 tablespoon ground white pepper

Combine egg, chopped spring onions, grated ginger, Shaoxing wine, soy sauce, minced garlic, sugar, half a teaspoon of salt, and half a teaspoon of white pepper in a bowl. Blend the ingredients until well combined. Add chicken to the mixture and stir until it's evenly coated. Allow the marination process to proceed for 20 minutes.

In a separate bowl, mix together one cup plus two tablespoons of sweet potato starch. Heat oil to 340 degrees F (170 degrees C) in a large saucepan. Dredge chicken pieces in the sweet potato starch, then carefully drop them into the hot oil in batches. Cook until the chicken is golden brown on the outside and cooked through, about 2 to 3 minutes per batch. Transfer the fried chicken to a paper towel-lined plate using a slotted spoon.

Arrange large lettuce leaves on a serving plate. Place the fried chicken pieces on top of the lettuce leaves. In a small bowl, mix together one tablespoon of salt and one tablespoon of white pepper. Sprinkle the seasoning mixture over the chicken to add flavor and texture.
