  • 1 egg
  • 1/2 cup all-purpose flour, or more as needed
  • 1 1/2 teaspoons baking powder
  • 2 cups shortening, or more as needed
  • 1/4 cup cornmeal, or as needed

Combine salmon, finely chopped onion, and beaten egg in a bowl; whisk until well combined. Gradually incorporate flour into the mixture to form a cohesive blend. In another bowl, whisk together baking powder and 2 tablespoons of the reserved salmon's cooking liquid until smooth. Fold this mixture into the salmon blend, stirring until it forms a cohesive shape when molded. If the mixture is too loose, add additional flour; if it's too dense, add a little more of the reserved salmon liquid. Use your hands to shape the mixture into small patties.

Melt a moderate amount of shortening in a skillet over medium heat.

Dip each patty into a shallow bowl filled with cornmeal, pressing it firmly onto the surface to ensure an even coating on both sides.

Fry the patties in the hot shortening until they're golden brown, taking about 5 minutes per side. Transfer the patties to a paper towel-lined plate using a slotted spoon to drain excess oil.
