Drain the pig tails in a colander and thoroughly clean the stockpot to prevent any residual flavors from affecting the dish.

Reinsert the pig tails into the pot and cover it once more with cold water. Introduce the onion, garlic, pepper flakes, and salt into the pot; bring the mixture to a rolling boil.
