Ingredients
- cooking spray
- 2 heads cauliflower, cut into 1/2-inch pieces
- 1 1/2 tablespoons avocado oil
- 3/4 teaspoon salt, divided

Heat the oven to its highest temperature setting, which is 450 degrees Fahrenheit or 230 degrees Celsius. To make preparation easier, cover three baking trays with aluminum foil and give them a light misting of cooking spray.

Take a food processor and fill it with one-quarter of the cauliflower pieces. Use short pulses to break down the cauliflower into small, grain-like pieces. Transfer these broken-down cauliflower bits to a large serving container. Repeat the process with the remaining cauliflower pieces.

Add a drizzle of avocado oil to the broken-down cauliflower and mix until it's evenly distributed throughout.

Spread two and a half cups of the cauliflower mixture onto each prepared baking tray in an even layer.

Place these trays in the oven and roast until they turn golden brown, approximately 16 minutes. Remove them from the oven, give everything a good stir, and redistribute it evenly across each tray. Return these trays to the oven for another six minutes, then remove them again and stir everything once more. Continue this roasting process until the cauliflower is nicely browned, taking around five minutes longer.

Before serving, sprinkle a pinch of salt over each tray of roasted cauliflower and transfer them to a large container for storage.
