Crispy Roasted Butternut Squash
Ingredients
  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
Instructions
1
Preheat the oven to its highest temperature setting, which is 400 degrees F (200 degrees C).
2
Use a sharp kitchen tool to remove the outer layer of the butternut squash, taking care not to damage it. Cut the squash in half lengthwise; remove and discard the seeds inside. Divide the squash halves into smaller pieces, cutting them into 1-inch thick slices before further dividing those slices into individual cubes.
3
Place the butternut squash cubes in a large container and add olive oil and minced garlic. Mix everything together until the squash is evenly coated with the oil and garlic mixture. Add a pinch of salt to enhance flavor, followed by a few grinds of pepper. Arrange the squash cubes in a single layer on a baking sheet.
4
Place the prepared squash mixture in the preheated oven and roast until it reaches a lightly browned color and is tender when pierced with a fork, taking around 25 to 35 minutes.
