Remove the outer layer of plantains and divide them into 1-inch thick pieces.

Submerge a large, deep skillet in hot oil over medium-high heat; carefully place the plantain slices into an even layer and cook on both sides until they turn golden brown, approximately 3 1/2 minutes per side. Set the skillet aside for now.

Transfer the cooked plantain slices to a flat surface; use a small, flat object to press down on each slice and flatten it slightly.

Dip the flattened plantain slices into a bowl of cold water.
