- 1 shallot, chopped
- 1 teaspoon honey mustard
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground black pepper
- 4 teaspoons mayonnaise
- 4 tilapia fillets
- 1 tablespoon vegetable oil
- 1 lemon, cut into wedges

Combine the shredded potatoes, finely chopped shallot, sweet and tangy honey mustard, a pinch of spicy red pepper flakes, savory garlic salt, and a few grinds of black pepper in a bowl.

Spread each fillet of fish with 1 teaspoon of creamy mayonnaise and top it generously with 1/4 of the potato mixture, pressing it firmly onto the fish.

Heat a generous amount of oil in a large nonstick skillet over medium-high heat. Carefully place the fish fillets in the skillet, potato-side down and cook until they develop a crispy and golden-brown crust, 4 to 5 minutes.

Turn the fish over gently, reduce the heat to medium and continue cooking until the fish flakes easily using a fork, 4 to 5 minutes more.

Serve the cooked fish with lemon wedges on the side.
