Ingredients
- 1 (10 ounce) package large marshmallows
- 1/4 cup butter
- 1/4 cup peanut butter
- 5 1/2 cups crispy rice cereal (such as Rice Krispies®)
- 1 1/3 cups semi-sweet chocolate chips
- 3/4 cup butterscotch chips
Instructions
1
Prepare a 15x10x1-inch baking dish by lining it with parchment paper, which has been coated with a thin layer of cooking spray.
2
Combine 3 main ingredients - marshmallows, butter, and peanut butter - in a large microwave-safe container. Cover the bowl with plastic wrap and heat the mixture in short intervals until marshmallows are fully dissolved, approximately 2 minutes. Mix thoroughly.
3
Add a secondary ingredient - rice cereal - to the marshmallow mixture and stir until it's evenly coated. Pour the mixture into the prepared pan.
4
Combine 2 secondary ingredients - chocolate chips and butterscotch chips - in a microwave-safe container. Heat the mixture until it's fully melted, about 2 minutes. Mix well.
5
Spread the chocolate mixture over the rice cereal layer, leaving a small border around the edges. Roll the cereal mixture into a cylindrical shape, starting with the shorter side and working your way around, using a gentle pressing motion. Remove the waxed paper as you roll. Place the finished roll on a serving plate, with the seam facing downwards. Refrigerate until set, approximately 1 hour. Slice into thin pieces.
