  • 1 ounce freshly grated Parmigiano-Reggiano cheese, or a little less
  • kosher salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper

Place eggs into a mixing bowl and introduce 1/4 teaspoon of water. Combine the ingredients using a whisk until they are just blended together, avoiding excessive mixing.

Next, pour olive oil into an 8-inch non-stick skillet and distribute it evenly over the bottom of the pan. Then, sprinkle grated cheese into the skillet, covering about 1/2-inch of depth (or roughly 1 ounce).

Now, place the skillet over medium-high heat and wait for the cheese to begin melting. This should occur after approximately 4 minutes, when it starts to bubble and turns golden brown. At this point, gently pour the eggs over the cheese in an even layer.

Subsequently, lower the heat to low and sprinkle salt, pepper, and cayenne over the eggs. Cover the pan and allow the eggs to cook on low until they are fully set, periodically checking after 30 seconds. For two eggs, this should take around 1 minute in total.

Finally, remove the pan from heat and use a spatula to gently fold the parmesan cheese in half. Transfer the cooked eggs to a serving plate.
