- 3 large eggs, beaten
- 1 1/2 cups panko bread crumbs
- 1/4 cup chopped fresh cilantro
- 1 lime, zested
- 1 pinch garlic powder, or more to taste
- 1 pinch cayenne pepper, or more to taste
- salt and ground black pepper to taste
- 4 tilapia fillets
- canola oil, or more as needed

Separate the ingredients into three distinct containers: one for flour, another for eggs, and a third for the bread crumb mixture.

In this mixture, combine cilantro, lime zest, garlic powder, cayenne pepper, salt, and black pepper.

Take the tilapia fillets and sprinkle both sides with a pinch of salt and a few grinds of black pepper.

Dip the first fillet into the flour, coating both sides evenly, and then gently remove any excess. Next, dip the fillet into the eggs, turning it once to ensure even coating, before finally coating it in the bread crumb mixture on both sides. Repeat this process with the remaining fillets.

In a large skillet, heat some oil over medium heat. Once hot, carefully place the coated tilapia fillets in the skillet and cook until the crust is golden brown and the fish is easy to lift with a spatula, approximately 3-4 minutes. Flip the fillets over and cook on the other side until they flake easily with a fork, another 3-4 minutes.
