- 1 cup panko (Japanese bread crumbs)
- 1/4 cup shredded Parmesan cheese
- 6 razor clams, cleaned and dried
- 1/3 cup vegetable oil for frying

Position a sheet of parchment paper on a flat baking sheet that is the perfect size to fit comfortably in your freezer. Set it aside for now.

In a large mixing bowl, whisk eggs together until they're well combined. In another bowl, sift flour, salt, pepper, and garlic powder together until they're evenly blended. In a third bowl, mix panko breadcrumbs and Parmesan cheese together until you get a uniform mixture.

Coat the clams thoroughly with flour, making sure to shake off any excess. Dip each clam into the egg mixture, coating it evenly, then roll it in the panko-Parmesan mixture, pressing gently onto the clam to ensure it adheres. Place the coated clams on the prepared baking sheet, cover them with parchment paper, and refrigerate until they're firm to the touch.

Heat a generous amount of oil in a skillet over medium-high heat. Fry the clams until they're lightly browned, about 1 minute on each side. Be careful not to overcook them. Remove the clams from the skillet with a slotted spoon and place them on paper towels to drain excess oil.
