- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 2 lemons - cut into wedges, for garnish

Discard the gills from the trout and rinse it under cold running water.

Place the fish in the refrigerator for 10-15 minutes to firm up before proceeding.

Heat a generous amount of olive oil in a large, deep skillet over medium heat.

In a separate dish, mix together flour, cornmeal, salt, black pepper, and cayenne pepper.

Increase the heat to high and dredge the trout in the flour mixture, coating it evenly.

Carefully add the coated trout to the hot oil and fry until it flakes easily with a fork, flipping it 4-6 times on each side.
