Prepare the ingredients by chopping the fennel greens and set them aside for later use.

Heat 1 tablespoon of oil in a well-seasoned nonstick pan over a medium heat setting. Arrange some fennel slices in a single layer in the pan; cook until they are nicely browned on both sides, taking around 5 minutes. Add a pinch of salt and some lemon pepper to enhance the flavor. Remove the cooked fennel from the pan. Add another tablespoon of oil and layer in the next batch of fennel slices, cooking them until nicely browned on both sides as well. Continue this process with the remaining oil and fennel, repeating the cooking process until all is done. Finally, serve the dish sprinkled with the prepared fennel greens.
