  • 6 skin-on, bone-in chicken thighs
  • salt and ground black pepper to taste
  • 1 pinch garlic powder, or to taste

Preheat your oven to the highest temperature setting, which is 475 degrees F (or 245 degrees C). Place a wire rack inside a baking or broiler pan to elevate the chicken.

Gently pat the chicken thighs dry with paper towels, making sure to remove any excess moisture. Using your fingers or a spoon, carefully lift the skin back and sprinkle salt, pepper, and garlic powder underneath. Reattach the skin, ensuring it's secure.

Rub salt, pepper, and garlic powder evenly onto both the skin and underside of the chicken thighs. Place them on the wire rack.

Roast the chicken in the preheated oven until it's golden brown, taking approximately 20 minutes. Lower the oven temperature to 400 degrees F (or 200 degrees C). Continue roasting until the juices run clear, which should take around 30 minutes more. Remove the chicken from the oven and let it rest for 5 minutes before serving.
