- 3 large eggs, or more as needed
- 2 cups milk, or more as needed
- peanut oil for frying
- 2 cups all-purpose flour
- 2 cups yellow cornmeal
- 1/2 cup seafood seasoning (such as Old Bay®)

Prepare the shrimp for marinating by positioning each one on a stable, flat surface. Carefully make a horizontal incision through the middle of the shrimp, being cautious not to penetrate all the way through to the other side. This will create a 'V' shape, allowing the shrimp to be flattened slightly.

In a separate container, combine eggs and milk, whisking them together until well-mixed. Add the shrimp to this mixture and allow it to marinate for 1 hour, allowing the flavors to penetrate the meat.

To heat the oil, place it in a deep-fryer or large saucepan and bring it to 350 degrees F (175 degrees C). This will ensure the oil reaches a suitable temperature for frying.

In another container, combine flour, cornmeal, and seafood seasoning. Pour the mixture into a zip-top bag, then add 5-6 shrimp to it and shake the bag vigorously to coat the shrimp evenly.

Once the oil is hot, carefully drop the coated shrimp into it. Fry them until they turn golden brown and opaque in the centers, approximately 5 minutes. Remove the shrimp from the oil with a slotted spoon and place them on paper towels to drain excess oil. Repeat this process for the remaining shrimp.
