  • 2 eggs, lightly beaten
  • salt and black pepper to taste
  • 1/2 cup oil for frying, or as needed

Combine the tender okra, juicy tomatoes, and pungent onions in a spacious container. Introduce the creamy grits, beaten eggs, savory salt, and aromatic pepper into the mixture, then blend everything together with your hands until it forms a harmonious union. Form the blended mixture into two patties, approximately 2 1/2 inches wide and half the size of a standard hamburger.

Heat oil in a well-seasoned cast iron skillet over an elevated heat level, medium-high. Add the patties to the skillet and cook until they acquire a golden hue, around 5 minutes. Flip the patties with a flat utensil and continue cooking until they are browned on the other side, approximately 5 more minutes. Remove the cooked patties from the skillet and drain excess oil on paper towels before serving them immediately.
