- 4 (6 ounce) fillets cod
- 2 tablespoons all-purpose flour for coating
- 2 cups quick-cooking oats

Preheat the skillet by heating a generous amount of oil over a moderately high heat level.

In a separate container, blend the egg and milk together until well combined. Dust cod fillets with flour; gently remove any excess powder. Submerge the cod in the egg mixture and let any surplus liquid fall away. Coat the fish with oats.

Carefully place each piece of fish into the hot oil; cook for 2 to 3 minutes on one side, then flip and cook an additional 2 to 3 minutes. Transfer the cooked fish to paper towels for draining. Add a pinch of salt and pepper to taste.
