Ingredients
  • 4 tablespoons olive oil, divided
  • 3 (8 ounce) packages sliced fresh mushrooms
  • 1/2 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 3/4 cup dry bread crumbs
  • 2/3 cup rolled oats
  • 1/2 cup freshly shredded Parmigiano-Reggiano cheese
  • 2 large eggs, beaten

Preheat your cooking surface by placing a large skillet over medium heat.

Add 2 tablespoons of oil to the skillet and let it warm up for a few moments before adding your ingredients.

Next, add sliced mushrooms, chopped onion, minced garlic, a pinch of salt, some pepper, and a sprinkle of dried oregano to the skillet.

Stir everything together constantly as it cooks, allowing the mushrooms to release their moisture and evaporate, taking about 10 minutes.

Once it's done, take the skillet off the heat.

Transfer the cooked mushrooms to a clean cutting board and wipe down the skillet with a cloth.

Cut the mushrooms into small pieces, then place them in a large bowl.

Mix in some crushed bread crumbs and rolled oats until well combined, adding a pinch of salt and pepper to taste.

Heat up the remaining 2 tablespoons of oil in the skillet over medium heat.
