Create a rectangular shape with a piece of parchment paper by folding it in half and then in quarters, resembling an airplane wing. Position the folded edge of the parchment in the center of a microwave-safe dish and determine its dimensions; cut off any excess parchment to fit snugly around the plate.

Slice potatoes into thin, uniform pieces using a mandoline and submerge them in cold water to remove excess starch. After rinsing, transfer the potato slices to a clean kitchen cloth to dry; gently pat the tops of the slices with the cloth to ensure they are as dry as possible.

Apply a small amount of oil to the parchment paper. Work in batches, placing the potato slices on the oiled parchment in a single layer; brush the tops of the slices with additional oil.

Heat the potato slices in a microwave for 3.5 minutes, then carefully flip them over and continue cooking until they are browned and stiff, approximately 4 minutes more. Monitor the chips' appearance frequently to avoid burning.
