Combine eggs, 1/4 cup sugar, and vegetable oil in a large mixing container until the mixture thickens and takes on a light lemon hue; incorporate 1 teaspoon of oil into the blend. In a separate bowl, whisk together 1 ½ cups flour, baking powder, and salt; gradually add the dry ingredients to the egg mixture, stirring until everything is evenly incorporated.

Transfer the dough onto a lightly floured surface and engage in thorough kneading until the dough becomes smooth and pliable.

Divide the dough into 16 equal portions, shape each one into a ball, and then flatten it slightly before rolling it out into an extremely thin circle with a diameter of approximately 5 inches.

Allow the dough circles to rest, uncovered and exposed to air, for around 10 minutes.

In a small bowl, mix together an equal amount of sugar and cinnamon until they are perfectly combined; set the mixture aside. Meanwhile, heat a substantial amount of oil in a deep frying pan to 350 degrees F (175 degrees C).

Carefully place one dough circle into the hot oil; fry until it becomes golden and crispy, flipping once, approximately 30 seconds on each side. Remove the fried dough circle from the oil and place it on a paper towel-lined plate to drain excess oil; sprinkle with the cinnamon-sugar mixture. Repeat this process with the remaining dough circles. Serve immediately or store in airtight containers to maintain freshness.
