Ingredients
- 1 1/2 pounds cod
- 1 cup salsa
- 1 cup shredded sharp Cheddar cheese
- 1/2 cup coarsely crushed corn chips
- 1 avocado - peeled, pitted and sliced
- 1/4 cup sour cream
Instructions
1
Begin by preheating your oven to a high temperature of 400 degrees Fahrenheit, or the equivalent of 200 degrees Celsius on your oven's temperature scale. Next, lightly coat an 8x12-inch baking dish with a thin layer of cooking spray to prevent the dish from sticking.
2
Next, take your cod fillets and gently rinse them under cold running water to remove any impurities. Then, use a paper towel to delicately pat the fillets dry, removing excess moisture.
3
Arrange the cod fillets side by side in the prepared baking dish, making sure they are snugly fitted together. After that, pour a generous amount of salsa over the top of the fish, ensuring an even distribution.
4
Sprinkle a uniform layer of cheese evenly over the salsa, taking care not to overload the dish. Finally, sprinkle a generous amount of crushed corn chips over the top of the cheese.
5
Place the baking dish in the preheated oven, leaving it uncovered to allow for even cooking. Continue baking until the fish is opaque and flakes easily with a fork, typically taking around 15 minutes.
6
Remove the baking dish from the oven and serve the fish hot, topped with sliced avocado and a dollop of sour cream.
