Ingredients
- 1/2 teaspoon vegetable oil
- 2 cups hot water
- 2 (6 inch) matzo sheets
- 2 large eggs
- 1/8 teaspoon kosher salt
- 1 tablespoon butter, divided
- kosher salt to taste

Heat a small amount of vegetable oil in a non-stick frying pan over a very low heat setting.

Prepare a bowl by pouring hot water into it, then submerge the broken matzo sheets in the water and let them sit for approximately 2 minutes.

In a separate container, whisk together eggs and a pinch of kosher salt until well combined.

Strain the matzo chunks to remove any excess moisture, then stir them into the egg mixture.

Carefully pour the heated oil from the frying pan into a separate container, then place 1/2 tablespoon of melted butter into the hot pan.

Pour the matzo and egg mixture into the hot butter, cover the pan, and cook until a solid patty forms, taking around 10 minutes.

Transfer the matzo patty to a plate and set it aside for now.

Return the remaining 1/2 tablespoon of melted butter to the hot pan, then place a second plate on top of the matzo patty.

Flip over the matzo patty, so that the side that was previously uncooked is now facing downwards.

Carefully slide the matzo patty back into the pan with hot butter, cover it again, and cook until the bottom is nicely browned, taking around 8 minutes.

Remove the pan from heat and season with kosher salt to taste.
