- 5 pounds Russet potatoes, finely grated, and soaked in water
- 1/2 cup flour
- 1 (12 ounce) can evaporated milk
- 6 eggs

Preheat your oven to a high temperature of 375 degrees Fahrenheit, or 190 degrees Celsius.

Next, lightly coat a 9x13 inch baking dish with a thin layer of oil or cooking spray to prevent food from sticking.

In a large skillet, heat over medium heat and cook the bacon pieces until they become crispy. Remove them from the skillet with a slotted spoon and place on paper towels to drain excess fat.

Keep half of the bacon's rendered fat in the skillet, and set it aside for later use. Return the skillet to the stovetop.

Add sliced onions to the skillet and cook until they become soft and translucent, stirring occasionally.

In a separate large bowl, combine the reserved bacon fat, cooked bacon, onions, and diced potatoes. Mix in a tablespoon of flour to thicken the mixture.

Add evaporated milk and beaten eggs to the bowl, stirring until well combined. Season with salt and pepper according to your taste preferences.

Pour the mixture into the prepared baking dish, and bake in a preheated oven until the top is nicely browned, approximately 1 hour.
