  • 1/4 cup sliced almonds
  • 1 tablespoon white sugar
  • 1 head red leaf lettuce, torn
  • 3 green onions, chopped
  • 1 Granny Smith apple, cored and chopped
  • 1 avocado - peeled, pitted, and chopped
  • 1/2 cup dried cranberries
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons red wine vinegar
  • 2 teaspoons white sugar
  • salt and pepper to taste
  • 1/4 cup vegetable oil

Heat a small skillet over medium-low heat and add the almonds along with 1 tablespoon of sugar.

The mixture will start to melt and turn golden brown as you stir constantly, taking care not to let it burn.

Once the almonds have reached your desired level of browning, remove them from the heat and let them cool down.

In a large salad bowl, combine the mixed greens, chopped green onions, sliced apple, diced avocado, dried cranberries, crumbled blue cheese, and toasted almonds.

To create the dressing, whisk together the vinegar, 2 teaspoons of sugar, salt, and pepper in a bowl.
