- 1/8 cup Italian-seasoned bread crumbs
- 1/3 cup shredded mozzarella cheese
- 1 teaspoon olive oil-packed minced garlic
- 1 pinch salt
- 1 pinch ground black pepper
- 1/4 cup cornmeal, or as needed
- 1 tablespoon olive oil
Instructions

Process lentils in a food processor until they reach a coarse texture; transfer them to a large mixing container.

Combine the ground lentils with finely chopped onion, beaten egg, diced bell pepper, and bread crumbs; add shredded mozzarella cheese, minced garlic, salt, and pepper to the mixture and blend well.

Divide the lentil mixture into four identical portions, shape each portion into a ball, and then flatten it slightly to form a patty.

Cover the bottom of a shallow bowl with cornmeal; coat each patty evenly in the cornmeal.

Heat olive oil in a large skillet over medium-high heat; cook the patties in the skillet until they are nicely browned, taking about 5 minutes per side.
