Crispy Lemon Rice Cookies

  • 1 (15.25 ounce) package lemon cake mix
  • 1 cup crispy rice cereal (such as Rice Krispies®)
  • 1 cup unsalted butter, melted
  • 1 large egg, slightly beaten

Preheat your oven to the optimal temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.

In a mixing vessel, combine the cake mix, cereal, melted butter, and egg in a harmonious union. Blend these ingredients until they form a cohesive whole.

Using your hands, shape the combined mixture into 36 identical spheres. Place these spheres 2 inches apart on a cookie sheet that has been liberally coated with non-stick spray.

Bake the spheres in the preheated oven for 9 to 12 minutes, or until they have attained a golden brown hue around the edges.

Once baked, allow the cookies to cool for 1 minute before carefully transferring them from the cookie sheet to a wire rack, where they can continue to cool and harden completely.
