Ingredients
- 2 eggs, lightly beaten
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon white sugar
- 1 tablespoon minced garlic
- 1 tablespoon grated fresh ginger root
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1/8 teaspoon chicken bouillon granules
- 1 1/2 pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
- 3 tablespoons potato starch
- 1 tablespoon rice flour
- oil for frying
Instructions
1
Combine eggs, salt, pepper, sugar, garlic, ginger, sesame oil, soy sauce, and bouillon in a large bowl. Thoroughly blend the ingredients until they are well incorporated. Add chicken pieces to the mixture and stir until they are evenly coated with the sauce. Cover the bowl with a lid and refrigerate for 30 minutes to allow the flavors to meld.
2
Next, remove the bowl from the refrigerator and add potato starch and rice flour to the chicken mixture. Mix everything together until the starches are evenly distributed throughout the meat.
3
Heat a significant amount of oil in a large skillet or deep fryer to 365 degrees F (185 degrees C). Once the oil has reached the desired temperature, carefully place the chicken in the hot oil. Fry the chicken until it is golden brown and cooked through, working in batches to maintain the optimal oil temperature. Remove the chicken from the oil with a slotted spoon and drain it briefly on paper towels to remove excess oil. Serve the hot, crispy chicken immediately.
