Crispy Italian Arancini Balls
Ingredients
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon dried parsley
  • 2 teaspoons salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1 quart water
  • 1 cup uncooked white rice
  • 1 1/2 cups dried bread crumbs
  • 2 cups olive oil, or as needed

Combine eggs, cheese, parsley, 1 teaspoon salt, and pepper in a medium bowl until they are fully incorporated. Cover the bowl with plastic wrap and refrigerate it while you prepare the rice.

In a large saucepan, combine water and remaining 1 teaspoon salt. Bring the mixture to a rolling boil. Then, add rice to the saucepan and reduce the heat to a low simmer. Cook the rice, stirring constantly, until most of the water has evaporated. Remove the saucepan from the heat source and slowly pour in the egg mixture, stirring vigorously to prevent the eggs from becoming scrambled. Allow the rice mixture to cool down at room temperature for 1 hour.

On a cutting board, create a small mountain of bread crumbs. Dampen your hands and shape the rice mixture into 1-inch balls, then coat each one with bread crumbs.

Heat about 1 inch of oil in a deep saucepan to 350 degrees F (175 degrees C). Fry the rice balls in hot oil, turning them as needed to ensure even browning. Remove the fried rice balls from the oil and place them on paper towels to drain excess oil. Serve the warm rice balls immediately.
