Place cooking spray into the can and lightly mist its surface onto the large dinner plate; set it aside for now.

In a plastic bag, combine oil and potato slices; shake vigorously to evenly coat the potatoes.

Arrange the coated potato slices in a single layer on the prepared dinner plate.
