Ingredients
- Custom or prepared paper fortunes
- 1 large egg white
- 1/4 cup white sugar
- 1 tablespoon milk
- 1/8 teaspoon vanilla extract
- 1/8 teaspoon almond extract
- 1 pinch salt
- 1 tablespoon melted butter
- 1/3 cup all-purpose flour, or more as needed
Instructions
1
Create 3-inch wide paper slips with inspirational messages.
2
Heat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with a flexible silicone mat or paper for easy cleanup.
3
Mix together egg white, sugar, milk, vanilla extract, almond extract, salt, and butter in a bowl. Use a whisk to blend the ingredients until sugar is fully incorporated. Add flour and continue blending until the mixture forms a smooth, even batter that easily slides off your whisk.
4
Spoon 1 tablespoon of the prepared mixture onto the baking sheet, spreading it out into a circular shape using the back of a spoon. Repeat this process one more time.
5
Bake the first batch in your preheated oven until they become crispy and golden on the edges, while remaining pale at their centers. This should take around 10 minutes.
6
Use a spatula to carefully lift the cookies out of the oven. Add a paper fortune to each cookie, then fold them in half and press the edges together gently.
7
Bend each cookie over the edge of the baking sheet, bringing the ends down on either side. Lift them up and curve the ends towards each other to create a neat shape. Place the cookies in individual ramekins or muffin tins to maintain their form while they cool.
8
Bake the remaining cookie mixture in batches, folding and shaping them as soon as possible. Once they have cooled completely, remove the cookies from their ramekins or muffin tins.
