  • 5 green tomatoes, sliced 1/2 inch thick
  • 1 cup crushed saltine crackers
  • 2 eggs, beaten
  • 1/2 cup butter

Combine flour, salt, and pepper in a small bowl to create a dry mixture. In another bowl, gather crushed saltine crackers and beaten eggs separately.

Heat butter in a large skillet over medium heat until it reaches the desired temperature. Dip each tomato slice into the beaten eggs to coat, then into the flour mixture. Next, dip the floured tomato slice back into the eggs and finally into the crushed crackers.

Carefully place coated tomato slices in the hot skillet. Cook until they turn golden brown on each side, taking about 3 to 5 minutes per side. If more butter is needed for the pan, add it now. Serve the crispy tomato slices hot
