  • 2 eggs, lightly beaten
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon garlic powder
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon vegetable oil

Combine the mashed potatoes, potato starch, egg, salt, pepper, garlic powder, and 1 teaspoon of chives in a medium-sized bowl until everything is well incorporated. The mixture should have a slightly sticky consistency but not be too loose.

Heat 1 tablespoon of oil in a 10-inch non-stick skillet over medium-high heat until it reaches the desired temperature and emits a pleasant aroma. Carefully pour the potato mixture into the skillet and press it evenly into a circular shape, approximately 9 inches in diameter.

Decrease the heat to medium; cover the skillet with a lid or a flat cookie sheet and cook, rotating the skillet by 90 degrees every 2 to 3 minutes, until the edges are golden brown and the top of the pancake feels almost dry to the touch, taking around 8 to 9 minutes.

Carefully transfer the potato pancake onto a large plate. Spray another large plate with non-stick cooking spray and invert the potato pancake onto the greased plate.
